The retail and food service segments are increasingly sophisticated, yet the science of understanding how the physical environment affects consumer behavior is surprisingly low. No matter how advanced our technological world becomes, we humans still inhabit physical bodies that have not evolved that much in the past 100,000 years. In other words, we still rely on our basic senses and powers of perception to make key (purchase) decisions.
For the past 20 years, Kevin has led a team of business, science and design professionals on a quest to better understand how humans perceive and behave in physical spaces, including restaurants, malls, grocery stores, convenience stores, public markets and more.
During this provocative discussion, Kevin will unfold some of the insights, strategies and techniques his firm utilizes to attract, shape and influence specific consumer behaviors within retail and foodservice environments.
